A tunnbrödsrulle wraps a grilled sausage and its toppings in soft Swedish flatbread, called tunnbröd, instead of a bun, closer to a wrap than a sandwich. Food trucks and corner kiosks, known as korvkiosker, across Sweden sell them as a quick handheld lunch.
Mashed potato spread thin down the center of the bread keeps the filling from sliding out, and a spoonful of shrimp salad, small cooked shrimp folded into mayonnaise with dill, sits alongside the sausage for a combination that reads unusual on paper and works well in practice.
Tunnbrödsrulle is one of the best hot dogs from around the world.
method
Grill or pan-fry the sausages until hot through and lightly charred, about 8 to 10 minutes.
Mash the potatoes with the butter and milk until smooth and spreadable.
Make the shrimp salad by folding the chopped shrimp with the mayonnaise, dill and lemon juice.
Warm the flatbread briefly on a dry skillet so it is soft and pliable.
Spread a thin line of mashed potato down the center of the flatbread, lay the sausage on top, then add a spoonful of shrimp salad and a scatter of crispy onions.
Add a squeeze of ketchup and mustard, then roll the flatbread tightly around the filling and eat from one end.
chef's tips
- Warm the flatbread first; a cold one cracks instead of rolling cleanly.
- Keep the mashed potato layer thin, or the wrap will not close properly.
- Small cold-water shrimp work best for the salad; drain them well before mixing.
