Two slices of dark country bread, one spread with butter and honey, on a speckled plate with a glass of milk, a bowl of honey, a dish of butter and a red apple.

The traditional Slovenian breakfast is five foods: bread, butter, honey, milk and an apple. It is promoted each year in Slovenian schools and kindergartens as a way of eating local food, and it is also a plain, filling breakfast at home. There is almost nothing to cook, so each ingredient has to be good.

Choose a dark, sturdy country loaf with a good crust (rye and wheat is typical), butter at room temperature so it spreads without tearing the crumb, and a runny local honey such as linden or acacia. Serve the milk cold and fresh, and the apple crisp.

Tradicionalni Slovenski Zajtrk is one of the best breakfasts from around the world.

method

  1. Take the butter out of the refrigerator 30 to 45 minutes ahead, until soft enough to spread easily but not oily.

  2. Slice the bread about 1.5 cm (1/2 in) thick. If the loaf is more than a day old, warm the slices on a tray at 160°C (325°F) for 5 minutes to bring back a crisp crust and soft crumb.

  3. Spread the butter generously over the bread to the edges, thick enough that you can see it. Add a pinch of flaky salt, if you like.

  4. Drizzle the honey over the butter, or put it in a small bowl with a spoon so everyone can take as much as they want.

  5. Pour the cold milk into glasses, wash the apples and serve them whole or cut into wedges. Eat the bread by hand, with bites of apple and sips of milk in between.

chef's tips

  • Do not give honey to babies under 12 months old.
  • Use pasteurized milk, unless you know and trust the source of raw milk.
  • A few slices of local cheese or a boiled egg round it out if you want a bigger meal.
  • The bread matters most. A sourdough rye with a thick crust is closest to what the dish is built around.
