Ingredients:

  • 4 salmon fillets
  • 2 large zucchinis
  • 1 tablespoon olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh herbs for garnish (dill, parsley)

Instructions:

  1. Start by seasoning the salmon fillets with salt, pepper, and a squeeze of lemon juice. Let them marinate for a few minutes.
  2. Heat olive oil in a pan over medium-high heat. Once hot, place the salmon fillets skin-side down. Cook for about 4-5 minutes until the skin is crispy.
  3. Carefully flip the salmon and cook for an additional 3-4 minutes, or until the salmon is cooked to your desired level of doneness.
  4. While the salmon is cooking, use a spiralizer to create zucchini noodles (zoodles) from the zucchinis.
  5. In another pan, quickly sauté the zoodles in a small amount of olive oil for 2-3 minutes, just until they are tender but still have a bit of crunch.
  6. Plate the zoodles and top each serving with a seared salmon fillet.
  7. Garnish with fresh herbs like dill or parsley for an added touch of flavor and presentation.
