The Story Behind the Burger
This combination was pioneered by French bistros looking to use their excess Roquefort.
The modern version was perfected at NYC's Corner Bistro.
Today, the best is served at Portland's Le Pigeon, where they age their own blue cheese specifically for their burgers.

Ingredients

For the Burgers:
- 1 pound (450g) ground beef (80/20)
- 4 oz quality blue cheese
- 2 brioche buns
- Kosher salt
- Black pepper
For the Caramelized Onions:
- 2 large sweet onions
- 3 tablespoons butter
- 1 tablespoon olive oil
- ΒΌ teaspoon salt
- 1 tablespoon balsamic vinegar (optional)
Instructions
- Slice onions thinly (β inch).
- Cook in butter/oil on medium-low for 25-30 minutes.
- Add balsamic last 5 minutes if using.
- Form two 8oz patties, create dimple in center.
- Season generously, cook 4-5 minutes per side.
- Top with blue cheese last 2 minutes.
- Stack with caramelized onions.
