The spinach is here for the ice-cream-parlor green, not the flavor; the mint and cocoa shout over it completely.
A teaspoon of cacao nibs at the end gives you the "chip" with a crunch and almost no carbs.
This is number 16 of our top 20 high protein, low carb smoothies.
method
Pour the almond milk into the blender, add the spinach, mint, cocoa and protein powder.
Add the ice. Blend on high for 30 to 45 seconds, until completely smooth.
Pulse in the cacao nibs for two seconds at the end so they stay crunchy. Taste and adjust: a few more ice cubes for thicker, a splash more liquid for thinner. Drink cold.
chef's tips
- Fresh mint only. Mint extract turns it into toothpaste fast; if you must, one drop.
- The nibs go in last on a short pulse; fully blended they just disappear.
- Liquid first, soft ingredients next, ice last. It blends faster and nothing sticks under the blades.
