Ingredients
For the Ribs:
4 lbs beef short ribs
2 carrots, large dice
2 celery stalks, large dice
1 onion, large dice
4 garlic cloves
2 cups dry red wine
4 cups beef bone broth
Fresh herbs (thyme, rosemary)
Instructions
Initial Prep:
Season ribs generously
Sear in hot Dutch oven
Remove, set aside
Sauté vegetables
Braising Setup:
Deglaze with wine
Add broth and herbs
Return ribs to pot
Bring to simmer
Cooking:
Cover, transfer to 325°F oven
Cook 2.5-3 hours
Check tenderness
Remove ribs when done
Finishing:
Strain sauce
Reduce if needed
Chill overnight
Remove fat layer
Reheat and serve
