Ingredients

For the Peppers:

  • 6 large bell peppers
  • 2 lbs ground beef (93/7)
  • 2 cups riced cauliflower
  • 1 onion, finely diced
  • 3 garlic cloves, minced
  • 1 cup marinara sauce (sugar-free)
  • 2 cups shredded cheese
  • Italian seasoning
  • Salt and pepper

Instructions

Pepper Preparation:

  1. Cut tops off peppers
  2. Remove seeds and membranes
  3. Pre-roast 10 minutes
  4. Let cool slightly

Filling:

  1. Brown beef with onions
  2. Add cauliflower rice
  3. Mix in seasonings
  4. Stir in half the cheese

Assembly:

  1. Fill each pepper
  2. Top with sauce
  3. Add remaining cheese
  4. Place in baking dish

Baking:

  1. Cover with foil
  2. Bake 25 minutes at 375°F
  3. Uncover, bake 10 more minutes
  4. Broil for cheese crust
