Ingredients
For the Peppers:
- 6 large bell peppers
- 2 lbs ground beef (93/7)
- 2 cups riced cauliflower
- 1 onion, finely diced
- 3 garlic cloves, minced
- 1 cup marinara sauce (sugar-free)
- 2 cups shredded cheese
- Italian seasoning
- Salt and pepper
Instructions
Pepper Preparation:
- Cut tops off peppers
- Remove seeds and membranes
- Pre-roast 10 minutes
- Let cool slightly
Filling:
- Brown beef with onions
- Add cauliflower rice
- Mix in seasonings
- Stir in half the cheese
Assembly:
- Fill each pepper
- Top with sauce
- Add remaining cheese
- Place in baking dish
Baking:
- Cover with foil
- Bake 25 minutes at 375°F
- Uncover, bake 10 more minutes
