Ingredients:
For the Chicken:
2 pounds chicken breast, cut into 1-inch cubes
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
For the Buffalo Sauce:
1/2 cup hot sauce (like Frank's RedHot)
4 tablespoons grass-fed butter
1 tablespoon white vinegar
1/4 teaspoon garlic powder
1/4 teaspoon cayenne (optional)
For the Blue Cheese Drizzle:
1/2 cup Greek yogurt
2 tablespoons blue cheese crumbles
1 tablespoon lemon juice
Salt and pepper to taste
Instructions:
Prepare the Chicken:
Preheat oven to 425°F (218°C)
Mix all seasonings in a bowl
Toss chicken cubes with olive oil and seasoning mixture
Arrange on a lined baking sheet
Cook the Chicken:
Bake for 15-20 minutes
Turn pieces halfway through
Cook until internal temperature reaches 165°F (74°C)
Make the Buffalo Sauce:
Melt butter in a small saucepan
Add hot sauce, vinegar, and seasonings
Whisk until well combined
Simmer for 2-3 minutes
Make the Blue Cheese Drizzle:
Mix Greek yogurt with blue cheese crumbles
Add lemon juice
Season with salt and pepper

Toss hot chicken bites in buffalo sauce
