Ingredients:
For the Marinade:
1/4 cup lime juice
2 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons ancho chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
1 teaspoon salt
1/2 teaspoon black pepper
For the Chicken:
4 (6-8 oz) chicken breasts
Lime wedges for serving
Fresh cilantro for garnish
Instructions:
Prepare Marinade:
Combine lime juice and olive oil
Add minced garlic and all spices
Whisk until well combined
Marinate Chicken:
Place chicken in zip-top bag
Pour marinade over chicken
Massage to coat evenly
Refrigerate 2-4 hours
Prepare for Cooking:
Remove from refrigerator 30 minutes before cooking
Preheat grill or grill pan to high heat
Remove chicken from marinade
Cook:
Grill chicken 6-7 minutes per side
Create crosshatch marks by rotating 45 degrees
Cook until internal temp reaches 165°F
Rest and Serve:
Let rest 5 minutes
Slice against the grain
Garnish with cilantro
Serve with lime wedges
Pro Tips:
Don't marinate longer than 4 hours (lime juice will start cooking chicken)
