Ingredients:

For Velveting:

  • 1 pound chicken breast, cut into 1-inch cubes
  • 1 teaspoon baking soda
  • 2 tablespoons water

For the Sauce:

  • 1/4 cup coconut aminos
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon monk fruit sweetener
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1/2 teaspoon xanthan gum

For Cooking:

  • 2 tablespoons avocado oil
  • 2 tablespoons sesame seeds
  • Green onions for garnish

Instructions:

Velvet the Chicken:

  1. Mix baking soda and water in a bowl
  2. Add cubed chicken and mix well
  3. Let sit for 30 minutes at room temperature
  4. Rinse thoroughly under cold water
  5. Pat completely dry

Prepare the Sauce:

  1. Combine coconut aminos, rice vinegar, sesame oil
  2. Add monk fruit sweetener, garlic, and ginger
  3. Whisk in xanthan gum until smooth
  4. Set aside

Cook the Chicken:

  1. Heat avocado oil in a large wok or skillet over high heat
