Dal Bhat, a classic from Nepal.

Dal bhat is what most of Nepal eats most days, twice: lentils and rice, with vegetable curry and pickles orbiting. Trekkers learn the saying on day one: dal bhat power, twenty-four hour.

The move that elevates humble boiled lentils is the jhaneko, a tempering of cumin seeds, garlic and chili sizzled in hot fat and poured, still roaring, over the finished dal.

Dal Bhat is one of the world's classic dishes from 67 countries.

method

  1. Simmer the lentils with the turmeric and salt, partly covered, for 25 to 30 minutes until completely soft. Whisk briefly to your preferred texture.

  2. Make the tempering: heat the ghee until shimmering, add the fenugreek then cumin seeds, let them crackle, then the garlic and chilies until the garlic edges gold.

  3. Pour the sizzling tempering over the dal and clap the lid on for a minute.

  4. Serve a mound of rice with the dal poured over one side, vegetable curry on the other, and pickle wherever it fits.

chef's tips

  • The tempering is poured in hot enough to hiss; that sound is the recipe working.
  • Dal thickens as it stands; loosen with hot water and re-salt.
  • Any quick vegetable curry qualifies; dal bhat is a system, not a fixed menu.
