Coconut Chocolate Protein Smoothie in a glass

Light coconut milk carries the coconut flavor without the full-fat calories, and a tablespoon of shredded coconut gives it texture on top of the chocolate protein.

Toast the shredded coconut first if you have a spare minute. It turns a good smoothie into one that tastes like it came from a candy bar.

method

  1. Pour the coconut milk and water into the blender, add the protein powder and shredded coconut.

  2. Add the ice. Blend on high for 30 to 45 seconds, until completely smooth.

  3. Taste and adjust: a few more ice cubes for thicker, a splash more liquid for thinner. Drink cold.

chef's tips

  • Toast the shredded coconut first in a dry pan for a deeper, nuttier flavor.
  • Use a protein powder with no added sugar. It is the difference between a few grams of carbs per scoop and a lot more.
