Cooked beet brings an earthy flavor and the deepest color of any smoothie here; frozen strawberries soften it so it reads as fruity, not like a vegetable juice.
Buy the beets already cooked and vacuum-packed. It is the difference between a five-minute smoothie and a cutting board stained pink for a week.

method
Pour the almond milk into the blender, add the beet, strawberries and protein powder.
Add the ice. Blend on high for 30 to 45 seconds, until completely smooth.
Taste and adjust: a few more ice cubes for thicker, a splash more liquid for thinner. Drink cold.
chef's tips
- Use vacuum-packed cooked beets from the store. Already peeled, no pink cutting board.
- Use a protein powder with no added sugar. It is the difference between a few grams of carbs per scoop and a lot more.
