These Asian-inspired lettuce wraps deliver a satisfying crunch and bold flavors without the carbs of traditional wraps.

Ingredients

  • 1/2 lb ground chicken
  • 1/2 cup onions, finely diced
  • 1 clove garlic, minced
  • 1 tbsp low-sodium soy sauce
  • 1 tsp grated ginger
  • 1 tsp rice vinegar
  • 8 butter lettuce or iceberg lettuce leaves
  • 2 tbsp chopped peanuts
  • 2 green onions, thinly sliced

Instructions

  1. Heat a non-stick pan over medium-high heat
  2. Add ground chicken, breaking up with a spatula
  3. When chicken is halfway cooked, add diced onions and garlic
  4. Cook until chicken is no longer pink and onions are translucent
  5. Add soy sauce, ginger, and rice vinegar
  6. Stir and cook for another minute until liquid is mostly absorbed
  7. Spoon mixture into lettuce leaves
  8. Top with chopped peanuts and green onions

For authentic flavor, add 1-2 teaspoons of hoisin sauce to the chicken mixture. Water chestnuts add a delightful crunch—just dice them and add with the onions.
